Gluten-free, Dairy-free Baking!

These were easy to make and made my apartment smell wonderful.


The verdict: Very flavorful.  I love the coconut and dark chocolate together.  They're like a cross between a cake and a cookie.  Very light and fluffy, slightly crumbly.  I can handle gluten-free/dairy-free baking if everything turned out like this!

Details - Ingredients: Trader Joe's Gluten-free Pancake Mix, Crisco Vegetable Shortening, eggs, brown sugar, vanilla, sweetened flake coconut, dark chocolate chunks.  I baked it at 350F for 21 minutes and rotated the pan halfway thru the baking time.  I used both Pam spray and parchment paper, which I highly recommend.  It still stuck a little to the parchment paper.
